Like every time I post easiest method for preparation of recipe.Similarly today I'm going to post the easiest method of Methi paratha and Baigan bharta.Sandip this for you.........
It is a very good source of iron. That is why fenugreek, both its seeds and leaves are considered medicinal for curing anemia. In fact, even if you follow standard medicine, patients with low hemoglobin count are usually put on a diet of fenugreek and other vegetables like spinach and lettuce.Fenugreek is a kind of similar to bitter gourd when we consider the bitter taste and properties of regulating insulin. It is a must note point for diabetics.
Ingredients:
1 bunch of Methi(fenugreek)leaves,
2-3 cloves of garlic
2 green chillies,
salt to taste,
1 tsp oil
2 tbsp butter
4 cups of all purpose flour(atta)
Process : First grind methi leaves, garlic,green chilly.Add the methi paste to the flour.Then mix salt and oil. And make a smooth dough.Leave it for 10 min.wrapping with a thin and wet cotton cloth.Now take some dough and make a circle like roti.It should be little thick than roti.Then pan-fry the paratha,when done spread little butter over it.
Baingan Bharta
Ingredients
1 Big baingan or eggplantTo make it more colorful and tasty add 2 bsp peas and american corn
1 small onion,1 tsp ginger garlic paste1 tomato1 tsp cumin seeds1 tsp chilly powder1 tsp turmeric powder1 tsp garam masala1 small bunch corriander leaves2 tsp oil for cooking
1 tsp butter
salt to taste
Process
First make small small hole on brinjal. And burn the brinjal on gas stove. while burning, rotate the brinjal time to time. the hole on brinjal help to bake brinjal.Take a pan.Add oil.Add cumin seeds.When it starts to splutter,add Onion and stir. Then add ginger-garlic paste and fully smashed tomato and stir well.Now add turmeric powder, chilly powder and garam masala one by one and stir.By the time remove the burnt peel of brinjal.And smashed it to a paste.Finally add the smashed brinjal ,peas and American corn to the masala and stir well.After mixing well add little water and cover the lid.Remove the lid after 3-4 min.In between stir the brinjal ,so that it'll not stick to pan.At the end add chopped corriander leaves and butter and mix well.
